Ingredients
- Skewers
- Whole grain loaf bread
- Sweet potatoes
- Cranberries or grapes
- Butter
- Chicken stock
- Apples
- Maple syrup
- Salt & pepper
Preparation
Cube bread into 1 inch squares.
Heat 1 tablespoon of butter in a pan. Saute cubed bread over medium heat until it starts to brown and crisp. Add 1-2 tablespoons of chicken stock and saute for a few minutes more. Season with salt and pepper to taste.
Cut sweet potatoes and green apples in 1/2 in. cubes. Lightly coat with olive oil and maple syrup, kosher salt and pepper. Bake at 400 degrees for 15 minutes to soften.
Skewer bread cubes, sweet potatoes, apples and cranberries or grapes.
Bake skewers in the oven at 300 degrees for 10-15 minutes or until golden brown.
