Microwave Blueberry Ginger Oatmeal
-
This is a healthier, tastier alternative to the instant oatmeal packets sold at the supermarket. Make several batches ahead of time to store in single-serving containers for quick weekday breakfasts.

“Feel free to tinker with this one. Substitute other dried fruits, add toasted nuts, or try cinnamon in place of ginger.
”
Ingredients
- 1/3 cup old-fashioned whole oats
- 1 tablespoon dried blueberries
- 2 teaspoons packed brown sugar
- Pinch salt
- Dash ground ginger
- 2/3 cup water
Preparation
Put the oats, dried blueberries, brown sugar, salt and ginger in a deep, microwave-safe cereal bowl. Add water and stir.
Microwave on high for 2 to 3 minutes, until the oats absorb the liquid and appear soft. Remove from the microwave using an oven mitt. Stir and cool for 1 minute.
Enjoy as is or with a splash of cold milk.
