Ham and Cheese Stacks

  • Surprise and delight your child with this fresh take on a lunchtime classic. Cut heart or star shapes into the apple slices for an extra serving of fun.

A great way to ensure the lunchbox doesn't come back with an uneaten apple and a soggy, half-eaten sandwich! Try nut or seed butter instead of mustard as a tasty alternative.

Ingredients

  • 1 large apple, 3"-4" in diameter
  • 1-2 slices cooked deli ham
  • 2 slices cheddar cheese
  • 1/2 teaspoon Dijon mustard, optional

Preparation

  • Set the apple on it's side, on top of a folded, damp paper towel for stability, and cut four 1/4" thick slices crosswise from the middle (thickest part) of the apple. Set aside remaining apple for other use.

  • Using a 1" petite shaped cutter of your choice, cut shapes from the middle of two of the slices. Set the four slices aside.

  • Using a 3" round cutter, cut out 2 circles of each ham and cheese from the slices.

  • If using mustard, spread 1/4 teaspoon each on the two slices without the petite cutouts. Layer one of each ham and cheese round per apple slice, then top each with cutout slice. Wrap and refrigerate until needed.
